Bad burger buns:
Fall apart when you pick up the burger

Slightly sweet (balances savory burger)
Absorbent enough to handle juices without disintegrating

âď¸ UNIFORM SIZING MATTERS
Why: So all your burgers cook at the same time. So everyoneâs bun-to-burger ratio is the same.
How: Use a kitchen scale. Divide total dough weight by number of buns you want. Portion exactly.
Example: 920g total dough á 8 buns = 115g each.
Visual trick: Line them up after shaping. If one looks bigger, adjust.
Bun template: Place a 4-inch ring (like a large biscuit cutter) on your sheet as a guide while shaping. Remove before proofing.
đ OTHER SHAPES FROM THE SAME DOUGH
Hot dog buns: Shape dough into 6-inch logs instead of balls. Place close together in rows (touching sides will keep them soft). Proof and bake as directed.
Slider buns: Divide into 50-60g pieces. Shape into small balls. Bake 12-14 minutes.
Sub/hoagie rolls: Shape into 8-10 inch logs. Score down the middle before baking. Bake 18-20 minutes.
Pretzel buns: After shaping, boil in baking soda water (like bagels) for 30 seconds per side. Sprinkle with coarse salt. Bake as directed.

Always toast them. The slight char and crispiness provides structure against burger juices.
Butter first: Brush cut sides with melted butter, then place cut-side down on grill.
Watch closely: They toast in 30-60 seconds. Donât walk away.

Sauce or spread (creates moisture barrier)
Burger patty
Cheese (if using)
Toppings
Top bun
This order keeps the bottom bun from getting soggy.
