Starter Prep

Ratio: 1:10:10

6g starter + 60g water + 60g flour = 126g total (26 g extra to save for next bake)

Peaks in: 10-14 hours

Fed at 7am: Peaks 5pm-9pm

Ingredients

• 500g bread flour (or all-purpose or 00)

• 350g water

• 100g active sourdough starter

• 10g salt

• 15g olive oil (this is the pizza secret)

Instructions

METHOD:

Evening (6pm): Mix all ingredients until combined. The olive oil makes the dough softer and more extensible.

Evening-Morning: Cover and leave on counter overnight. It’ll bulk ferment while you sleep.

Morning (8am): Divide dough into 2-3 portions (250-300g each for personal pizzas, 400g+ for large).

Shape: Roll each portion into a ball. Place on a lightly oiled plate or tray, cover.

Cold ferment: Refrigerate for 4-48 hours. This is the flavor development stage.

When ready to bake: Remove from fridge 1-2 hours before baking. Let come to room temp.

The flexibility: You can bake these dough balls anytime in that 4-48 hour window. Forgot to make pizza Wednesday? Thursday works. Friday? Still good. Saturday? Perfect.

BAKING:

Oven setup:

  1. Place a pizza stone or inverted baking sheet on the top rack.
  2. Preheat to the highest temp your oven goes (500-550°F) for 45+ minutes.

Shaping:

  1. Flour your work surface generously.
  2. Take one dough ball. Press from the center outward, leaving a thicker rim for the crust.
  3. Gently stretch with your hands. Let gravity help—drape it over your knuckles and rotate.
  4. Aim for 10-12 inches diameter. Thinner in the middle, thicker at the edges.

Assembly:

  1. Place shaped dough on parchment paper.
  2. Add sauce (thin layer—less is more).
  3. Add toppings (don’t overload or it’ll be soggy).
  4. Add cheese (grated melts better than sliced).

Baking:

  1. Slide pizza (on parchment) onto the hot stone/pan.
  2. Bake 8-12 minutes until crust is golden and cheese is bubbly.
  3. Remove carefully. Let cool 2-3 minutes before slicing.
